EASY, HEALTHY 4TH OF JULY RECIPES

There’s nothing worse than the fear of joining a 4th of July barbecue or picnic and not knowing if there will be food options that are healthy and not full of toxic chemicals (I’m talking about you, hot dog, and your “bread” bun).

Here’s how I get around that. Be a gracious guest and bring a dish. And, I have three recipes for you. They’re easy, healthy, and crowd pleasers. They can easily be paired with grilled meat like chicken breast.

MEXICAN STYLE SLAW

Slaw Ingredients:
1 lb bag of red cabbage/carrot slaw
1 red onion thinly sliced
2 jalapenos, sliced vertically
1 bunch cilantro, roughly chopped

Dressing Ingredients:
3 Tbsp of olive oil
1/3 C fresh squeezed lime juice
1 tsp honey or agave nectar
Pinch of salt and pepper

Instructions:
Mix all dressing ingredients in a well-sealed container and shake well. Toss slaw mix with dressing. Serve chilled.

 

BERRY JICAMA SALAD

Ingredients:
1 C chopped jicama
1 C blueberries
1 C chopped strawberries
1/3 c chopped mint
3 Tbsp fresh squeezed lime juice
2 Tbsp honey
Pink Himalayan salt

Instructions:
In a bowl, whisk together honey and lime juice. Place remaining ingredients in a large bowl, coat with dressing and sprinkle with salt. Serve chilled.

 

AVOCADO MANGO SALSA

Ingredients:

2 avocados, chopped
2 mangoes, chopped
1 bunched cilantro, chopped
½ red onion, chopped
1-2 jalapenos, depending on desired spice level
2 Tbsp fresh lime juice
Salt and pepper to taste

Instructions:
Mix all ingredients together. Keep cool until ready to serve.
